    Heat olive oil in a pan on medium heat

    Add the diced onion, carrot, and green pepper. Sàuté until softened. Add garlic, thyme, and bay leaves. Stir in the turmeric, wet leaf masala, and dhaniya/jeera powder,salt and pepper and fry for an additional minute until fragrant

    Add the plant-based mince (or your choice of mince) and allow to fry, Stir in the tomato paste and grated tomato. Mix well to combine. And soy sauce

    Reduce the heat to low and let the mixture cook for 20-25 minutes, stirring occasionally.

    While the mince is cooking, chop and boil your potatoes and cook until tender, about 15-20 minutes.

    Drain the potatoes. Mash with butter, adding salt and pepper to taste.

    Stir in cheddar and mozzarella cheese until well combined. Pop it into the oven, at 200 degrees for 20-25 minutes.
