    Using a mortar and pestle or a spice grinder, combine the garlic, thyme, oregano, rosemary, salt, black pepper, and Rombo Rossi masala, honey mustard, lemon juice and olive oil.

    Grind the mixture until it forms a coarse paste.

    Pat the lamb chops dry with paper towels.

    Rub the marinade evenly over both sides of each lamb chop.

    Place the marinated lamb chops in a resealable plastic bag or a covered dish and refrigerate for at least 2 hours, or overnight for a deeper flavor.

    Preheat your air fryer to 400°F (200°C) for about 5 minutes.
