Season the salmon fillets with salt and pepper. Pan-grill in some oil till the salmon flakes easily with a fork. Remove and set aside.

Add the rest of the oil and sauté the sliced garlic till fragrant. Add the orzo then sprinkle the dried Italian herbs evenly. Mix well before adding in the water or stock. If adding stock, don’t add anymore salt. Check for seasoning as you cook.

Cover and allow orzo to cook (should take about 5-6minutes on medium heat). By now, it should resemble a risotto but you’ll want to cook it further till there’s no more liquid.

Return the salmon fillets to the pan. Add the cherry tomatoes and spinach. Cover for a couple of minutes to allow the spinach to wilt. Top each fillet with some crispy chilli garlic.
