Loaded Oven-baked Frittata

Egg batter

Cook the above till all the liquids have evaporated and bacon slightly crisp. Turn heat off and set aside.

Pre-heat oven to 180C.

Whisk everything up.

Pour the egg batter into the sausage mix. Evenly spread the ingredients out. Top with chopped tomatoes and extra cheese I reserved from the above.

Place the pan in the oven. Allow it to cook for about 35-45 mins or until the frittata is puffy and the center no longer wobbles/looks wet.
