Jammy Five-Minute Eggs (with chilli oil on mashed avocado and buttered toast)

    Fill a pot with water and bring to a gentle boil.

    Carefully add the eggs to the pot one at a time.

    Let the eggs cook for five minutes.

    Switch off the heat and remove the eggs from the pot.

    Place the eggs in a bowl of ice water and let them sit for a couple of minutes.

    Mash the avocado with olive oil, lemon juice, salt, and pepper.

  7. 7

    Mix the chilli oil with extra virgin olive oil to make it runnier.

  8. 8

    Drizzle the chilli oil on top of the eggs and mashed avocado.

  9. 9

    Serve with buttered toast.
