Slow Roasted Cherry Tomatoes + Garlic with Whipped Goats Cheese

    Drizzle the tomatoes and garlic generously in oil, sprinkle over sea salt and roast for about 20-30 mins at 180, turn the oven down to 140 for another 20-30 mins. I then turn the oven off and leave them in there to cool to intensify the flavour more but that’s not essential. Remove any vines, squeeze the garlic from the skins and stir through.

    For the goats cheese simply whisk together the goats cheese, cream cheese and yoghurt until silky.

    Spread the whipped goats cheese onto a plate and top with the garlicky tomatoes and herbs.
