Sausage, Butterbean + Red Pepper Casserole

    Brown the sausages well in a little olive oil and set aside.

    Dice the onion, finely chop the garlic and chop the peppers.

  3. 3

    Add the onions to the pan and soften followed by the garlic and peppers. Soften for a few more minutes.

    Add the bay, thyme and smoked paprika followed by the tinned tomatoes, butter beans, stock, ketchup and vinegar and simmer gently for around 10 minutes.

    Dice the sausages, stir back in and simmer for 5 more minutes. If the sauce seems a bit thin continue to simmer for a few more minutes to reduce. Season well to taste and serve!
