Roasted Carrot and Caramelised Red Onion Salad

Quick and tasty salad with roasted carrots, caramelised red onion, crispy black beans, feta, and a tangy lemon + honey dressing.

    Peel the carrots and slice on an angle. Rough chop the red onion. Toss together in some olive oil and salt and air fry for 20 minutes at 180c until caramelised and soft.

    Drain and rinse the black beans, toss in oil and salt and air fry or roast for 10-15 minutes at 190c.

    Shake the dressing ingredients together in a jar.

    Assemble the salad with a bed of salad leaves. Top with the roasted carrots, red onions and crispy black beans. Crumble over the feta, zest over a little lemon scatter over the basil and drizzle generously with the dressing.
