Hoisin Salmon Bites with Pickled Cucumber and Sriracha Mayo

    Mix together the marinade ingredients, dice the salmon into cubes and stir through. Allow to sit for a minimum of 10 mins. Air fry or roast the salmon on a baking tray for 10 minutes. Tip any remaining marinade into a small saucepan and simmer for a couple of minutes. Then pour over the cooked salmon.

    For the cucumber use a peeler to create thin shavings, add to a bowl and cover in rice vinegar and a pinch of salt. Leave to sit for 10 minutes then discard the vinegar.

    Cook the rice and divide between two bowls.

    Top with the salmon, avo, cucumber, carrot, spring onion, some sesame seeds, chilli, coriander, a lime wedge and drizzle with the sriracha mayo.
