Grilled Sea-bream with Tomato, Red Onion + Coriander Salsa

The quickest, freshest and healthiest summer dish! Coriander haters, switch out for parsley.

    Wack the grill on as high as it will go, brush the fish with oil and sprinkle over some sea salt. Grill the fish skin side up until crispy and the fish is cooked through (3-5 mins)

    Cube the toms, finely dice the onion and coriander and toss in the juice of 1/2 lemon and a generous glug of oil, season well.

    Serve the fish with lots of salsa on top and more lemon if needed.
