Veggie Lasagna in a White Sauce
Pair this with a side salad and some roasted chicken! You can even add some chicken into the lasagna to add some protein!

Preheat the oven to 375F.

To a small baking dish (with the dimensions being 5 by 5), layer the olive oil, Alfredo/white sauce, lasagna noodles, veggies, ricotta, & mozzarella cheese while also seasoning with Parmesan, Italian seasoning, garlic, salt, and pepper in between layers. There should be 2 layers of noodles & the dish should be topped with mozzarella.

Cover with tin foil & bake for 25 minutes. Uncover & bake for an additional 10 minutes or until the top is golden brown & the sides are bubbling.
