For the cookie dough

Mix soft butter and sugars with a hand mixer until combined and creamed.

Add egg and vanilla extract and keep mixing.

Add dry ingredients and fold with a wooden spatula until combined.

Add chocolate and mix.

Divide dough in half and roll between two sheets of parchment into two slabs roughly 20cm x 10cm each. Freeze until needed.
