    Add everything to a saucepan and cook until the strawberries are soft and the spread has thickened to a honey-like consistency.

    Mash the strawberries with a fork and transfer to a container and refrigerate for 2 hours.

    Whisk sugar, lemon juice, and zest together over low heat on a stove.

    Cook while whisking gently but constantly until the mixture thickens to a custard consistency.

    Take off heat and add butter. Whisk until well combined.
