Japanese Matcha Chocolate Chip Cookies

    Melt butter on very low heat until just melted through. Turn off heat and whisk in matcha, shiro miso, and vanilla. Cool in refrigerator until solid but not hardened.

    In a bowl, add the cooled butter mixture, both sugars and whisk until combined. Add egg yolk and whisk again.

    Add dry ingredients and combine using a spatula.

    Add chocolate chunks and fold in.

    Scoop out 70 gram balls onto a parchment lined baking tray (preferably a not a darker coloured tray) and bake in a preheat oven at 190°C for 12 minutes.

    Immediately after they come out of the oven, very lightly flatten the cookies by hand and circle a cookie cutter around the cookie to make it round. Sprinkle a good amount of flaky sea salt over them.

    Let cookies cool until firm.
