Sweet Levain Rolls

In the bowl of a stand mixer, add flour, dry yeast, egg, milk, heavy cream, salt, and sugar. Mix for 4-5 minutes until the dough comes together.

Continue mixing and add butter in 2-3 batches. Mix until a soft, elastic dough forms, about 8-10 minutes. Add raisins and mix just to incorporate them into the dough. Check for the ‘windowpane’ effect. If the dough still breaks, let it rest for 10-15 minutes, then test it again.

Form the dough into a ball and let it rest, covered, for about 4 hours.

Lightly spray your work surface with water or oil. Degas and divide the dough into eight equal parts, forming a ball with each. Rest for 15 minutes.

Roll out each piece into an even small rectangle.

Add the filling and roll up the dough.

Repeat with the remaining pieces.

Transfer each roll to an oiled container (or silicone pan) and cover. Let them proof until they double in size or more.

Brush with milk before baking. Bake at 350°F for 35-40 minutes. After the first 25 minutes, cover with foil to avoid burning.
