Soft Bread with Cinnamon and Raisins
This golden loaf is as soft as it looks! Swirled with a ribbon of cinnamon and studded with plump golden raisins. It is more like a dessert!

In the bowl of a stand mixer, add flour, dry yeast, egg, milk, heavy cream, salt, and sugar. Mix for 4 or 5 minutes until the dough comes together.

Continue mixing and add butter in 2 or 3 batches. Mix until a soft and elastic dough forms, which should take between 8 to 10 minutes. Add raisins and mix just to integrate with the dough. Check for the ‘windowpane’ effect. If the dough still breaks, let it rest for 10 to 15 minutes and then test it again.

Form the dough into one ball and let it rest covered for around 4 hours.

Lightly spray your work surface with water or oil. Degass and divide the dough into two equal parts and form a ball with each one.

Roll out the dough into an even rectangle.

Brush the dough with melted butter and add the cinnamon, Roll up the dough (see video). Repeat this process with the other dough ball.

Transfer each roll the an oiled container and cover. They should proof until they double or more its size.

Brush with milk before baking. Bake at 350°F for 35- 40 minutes. After the first 25 minutes, cover with foil to avoid burning.
