Mix all pizza dough ingredients until a rough mass is formed and rest 35min, then knead until you reach a smooth surface.

Total Bulk 4 hours.

Cold retard between 24 - 72 hours.

Take the dough out of the fridge, and divide it into two balls. Rest covered until puffy (around two or three hours).

Shape into a thin layer (see video for shaping) and transfer to a medium baking pan and add toppings.

Bake on a pizza stone or steel plate at 480F for 15/20min or until golden.
