    Combine all dough ingredients and rest covered for 40 minutes.

    Perform one stretch and fold: Lift one side and fold over the center point of the dough. Do a quarter turn and repeat the process. Do this all around the dough.

    Transfer to an oily container and rest covered three hours at room temperature, then take it to the fridge for 24/48 hours.

    Divide the dough into three equal parts and make three balls. Rest covered for 2 or 3 hours or until puffy.

    Preheat your oven to 450°F.

    Dip each ball in semolina to prevent sticking. Roll out the pizza dough into a oval/rectangle, about 1/4 inch thick.

    Spread tomato sauce evenly over the rolled-out dough, leaving a small border around the edges.

    Add your desired toppings.

    Carefully shape as shown in the video, to form a log or baguette.

    Place the dough seam side down on a baking sheet lined with parchment paper or lightly greased.

    Brush the top with olive oil and sprinkle sesame seeds.

    Optional, Using a sharp knife, make diagonal cuts along the top of the dough, about 1 inch apart, without cutting all the way through.

    Bake in the preheated oven for 15- 20 minutes, or until the crust is golden brown.

    Remove from the oven and let it cool for a few minutes before slicing.
