Traditional Lebanese Kaak with a Sourdough Twist
Inspired by Traditional Lebanese Kaak with a Sourdough Twist! Filled with gooey, melted cheese, this kaak is wonderfully light and airy, with a nutty flavor from the sesame seeds.

Combine water, starter, Evoo, flours, sugar, and salt in a bowl. Mix until everything is fully integrated, then let it rest, covered, for 30 minutes.

Knead the dough until smooth and elastic, then let it rest on the counter, covered, for 5–6 hours.

Afterward, place the dough in the fridge overnight for a slow ferment.

The next day, remove the dough from the fridge and divide it into six equal balls. Let them rest, covered, for 30–40 minutes.

Prepare one dish with water and another with roasted sesame seeds.

Gently flatten each dough ball with your fingers, dip both sides in water, and then coat with sesame seeds.

Use a small jar or cutter to create the signature hole in the center.

Transfer the dough to a lined baking sheet or parchment paper and let them rise for 2–3 hours, covered.

Bake on a steel plate or pizza stone at 450°F for about 15 minutes or until golden brown.
