Challah Star with Sweet Stiff Starter
Get ready to take your challah game up a notch! These naturally leavened buns are soft, fluffy, and lightly sweetened with a special sweet stiff starter, giving you rich flavor without the tang.

Prepare the sweet stiff starter the night before making the dough by mixing all starter ingredients together in a 1L container. Cover the starter with plastic wrap and let it rise until peak (usually >12hrs).

The next morning, add flour, salt, granulated sugar, water, eggs and sweet stiff starter to the bowl of a stand mixer. Mix with a dough hook on low for 10 minutes.

Gradually add the oil to the dough in increments, mixing until smooth and elastic (20-30 mins).

Cover the dough with a bowl cover or plastic wrap and let the dough rise until it has doubled (this may take 3-10 hours depending on your ambient room temperature). Place the dough in the fridge until the next morning

The next morning, prepare a large cookie sheet with parchment paper.

Divide dough into 20 equal portions. Check out @challahprince for how to do the 4-strand braiding technique! Form each 4-strand braid into the points of a star.

Let it proof until doubled in size (and very soft/poufy).

Preheat oven to 365°F, egg wash, and bake for 50 minutes until golden, or until internal temperature reaches 190°F!
