Chipotle Stuffed Peppers
One of my fav ways to use leftover taco meat. Perfect for weeknight dinner or meal prep

Directions

Slice bell peppers down the middle & remove membrane

Place on baking sheet or pan

Drizzle a little olive oil over them & bake at 400 for 15min

Load them with ground turkey browned with spicy taco seasoning, onions & peppers

Cooked jasmine rice, cheddar cheese & jalapeños
- 6
Bake an additional 10-15min or until cheese is melted
- 7
Top with cilantro & chipotle ranch
