Herby Tofu Sandwich w/ Coriander Hummus
Delicious olive tapenade loaded with peppery rocket, herby tofu, vibrant lemon and coriander hummus, sweet roasted red pepper and sharp pickled onions finished with a sprinkle of chilli flakes for a little kick
Ingredients
For the olive tapenade
For the tofu
For the coriander hummus

Add all of the marinade ingredients to a shallow container and mix well to combine.

Cut the tofu into slices about 1/2 cm thick.

Add the slices to the marinade and coat well. Leave to marinate for as long as you can.

Meanwhile, make sure the tapenade by blending the olives with the olive oil.

Blend the hummus with the lemon juice and coriander.

Cook the tofu on a griddle pan or oven bake at 200°C until golden. Brush with a little more marinade.

Assemble your sandwich with the tapenade, rocket, tofu, hummus, pepper, onions and chilli flakes. Enjoy!
