Mexican Chicken Enchiladas

Mexican chicken enchiladas, packed full of colourful veg, red onions, red, green, yellow peppers and chillis full of speed!

    Fry off chicken and onions and peppers until soft, add @spicentice Mexican enchilada seasoning (add two tbsps of the tomato sauce (from below) and stir).

    To make sauce: The tomato sauce is a tub of pasatta,2 tsps cumin, 1 tsp crushed chillis, half a tsp of sweetener, 2 tsps tomato puree and 2 cloves of crushed garlic.

    Use the weight watchers wraps (hex b) and spoon the chicken in the middle. Fold and place into oven proof dish. Continue with the rest.

    Pour over the tomato sauce and sprinkle with 80g light cheddar cheese (hex a). Pop in oven for 20 mins on 200!
