A delicious and healthy salad with crispy chickpeas and kale
Ingredients
g Kale
Olive oil
Salt
g Chickpeas
Garlic granules
Paprika
tbsp Yogurt
tbsp Mayo
Lemon juice
Garlic cloves
g Parmesan
tbsp Capers
tsp Dijon mustard
Avocado
Spring onions
Olives
Instructions
Drain the chickpeas, place in a baking tray and dab with kitchen roll. Drizzle over olive oil, add a paprika and garlic granules. Bake in an oven at 200C for 30mins, check every 10 mins.
Wash the kale, remove any large stalks. Drizzle over olive oil and salt. Squeeze this into the kale.
In a bowl mix together the dressing ingredients, add kale and coat in the dressing. Top with sliced avocado, spring onions and olives. Add the crispy chickpeas and shavings of parmesan. Mix and enjoy!
