Toasted Coconut, Dark Chocolate and Sea Salt Cookies
Cookies with toasted coconut, dark chocolate and sea salt
Ingredients
g salted butter
g light brown sugar
g caster sugar
tsp vanilla bean paste
tbsp plantmilk
g plain flour
tsp baking powder
tsp baking soda
g dark chocolate
g desiccated coconut
Instructions
Pre heat the oven to 190C.
In a large bowl whisk together the sugar and butter until light and fluffy.
Add the milk and vanilla and mix well.
Now using a wooden spoon mix in the flour, baking powder and soda.
Toast your coconut in a frying pan until golden and roughly chop the chocolate into big chunks and fold these in too.
Pop the mixture in the fridge for 15 minutes to firm up.
Scoop a tablespoon of dough out and roll into a ball, place on parchment paper lined baking tray.
Continue to do this keeping the cookies at least 5cm apart - the grow!
Bake in the oven for 10-12 minutes until golden around the edges and then leave to cool for 10 minutes to firm up a little!
