Toasted Coconut, Dark Chocolate and Sea Salt Cookies

Ingredients

  • g salted butter
  • g light brown sugar
  • g caster sugar
  • tsp vanilla bean paste
  • tbsp plantmilk
  • g plain flour
  • tsp baking powder
  • tsp baking soda
  • g dark chocolate
  • g desiccated coconut

Instructions

  1. Pre heat the oven to 190C.
  2. In a large bowl whisk together the sugar and butter until light and fluffy.
  3. Add the milk and vanilla and mix well.
  4. Now using a wooden spoon mix in the flour, baking powder and soda.
  5. Toast your coconut in a frying pan until golden and roughly chop the chocolate into big chunks and fold these in too.
  6. Pop the mixture in the fridge for 15 minutes to firm up.
  7. Scoop a tablespoon of dough out and roll into a ball, place on parchment paper lined baking tray.
  8. Continue to do this keeping the cookies at least 5cm apart - the grow!
  9. Bake in the oven for 10-12 minutes until golden around the edges and then leave to cool for 10 minutes to firm up a little!
