Authentic spaghetti carbonara recipe with guanciale, pecorino romano, egg yolks, and pepper.
Ingredients
g Spaghetti
g Guanciale
Egg yolks
g Pecorino Romano cheese
Black pepper
Instructions
Whisk a mixture of egg yolks, pecorino and black pepper together.
Boil the pasta till al dente.
Add a splash of pasta water to egg mixture.
Over medium heat fry the guanciale golden brown.
When the pasta is done add it to the pan with the guanciale and add a splash of pasta water - then turn off the heat, then add the egg mixture and combine over the turned off stove for a few minutes.
Plate and serve with black pepper and grated pecorino.
