Authentic spaghetti carbonara recipe with guanciale, pecorino romano, egg yolks, and pepper.

Authentic Spaghetti Carbonara

Ingredients

  • g Spaghetti
  • g Guanciale
  • Egg yolks
  • g Pecorino Romano cheese
  • Black pepper

Instructions

  1. Whisk a mixture of egg yolks, pecorino and black pepper together.
  2. Boil the pasta till al dente.
  3. Add a splash of pasta water to egg mixture.
  4. Over medium heat fry the guanciale golden brown.
  5. When the pasta is done add it to the pan with the guanciale and add a splash of pasta water - then turn off the heat, then add the egg mixture and combine over the turned off stove for a few minutes.
  6. Plate and serve with black pepper and grated pecorino.
