Mom’s Soy Sauce Chicken with Crispy Ginger
One of my favorite childhood dishes is Mom’s Soy Sauce Chicken with Crispy Ginger and it was a surefire guarantee we’d wipe our rice bowls clean! The chicken is marinated in light and dark soy sauce, a handful of pantry staples, then stir fried and topped with a heaping pile of crispy golden ginger strips.

Marinate chicken 15 mins. Right before frying, separate chicken from the marinade, reserving excess marinade for later.

Heat vegetable oil in a wok on medium heat. Add julienned ginger and fry until golden and crisp. Remember to stir constantly as ginger has a tendency to clump.

Drain and cool ginger strips on a paper-lined plate.

Remove most of the oil, reserving 2 Tbsp in the wok. Increase heat to high. Add chicken, spreading it out in a single layer to sear.

Stir fry briskly until chicken is cooked and browned along the edges, about 2 mins.

Add reserved marinade and cook another 20 secs.

Reduce heat to medium low. Stir in cornstarch slurry and continue to cook until sauce is thick and glossy, about 30 secs.

Taste and adjust seasoning if needed.

Transfer chicken to a serving dish. Top with the crispy ginger strips and enjoy!

NOTE: We use young ginger as it is more tender and less fibrous
