Luohanguo Tea with Chrysanthemum
A cooling drink made with golden luohanguo and chrysanthemum, with optional longan or red dates.

Rinse the luohanguo.

Crack it open by crushing gently with your hands.

Break the shell into a few large pieces.

Pry open the flesh and tear apart into a few small pieces.

Combine the luohanguo shell, flesh, and water in a pot.

Bring to a gentle simmer and cook on low heat for 30-40 mins.

Taste at the 30-minute mark. If it isn’t sweet or flavorful enough to your liking, give it another 10 mins.

Add the chrysanthemum buds to the luohanguo.

Simmer for 1-2 mins, turn off the heat, cover and allow to steep for 10 mins.

Strain and enjoy the tea warm or chilled.
Notes
Do not boil luohanguo so as to preserve its delicate fragrance.
