One-Pot Lemon Chicken Orzo
A delicious one-pot lemony chicken orzo recipe.

Directions

Marinate 10 chicken thighs as you wish.

Cook your chicken on each side in olive oil.

Cook chopped onion on a low heat until browned.

Add garlic and mix well.

Add orzo and mix until coated.

Pour in vegetable stock.

Add salt, pepper, and liberal amounts of lemon juice.

Once the spinach has softened, add the chicken back to the pot and cover with the lid.

Cook for 15 minutes until the water has evaporated and the orzo is cooked.

Add more vegetable stock during cooking if necessary.

Top with chopped parsley.

Serve with chopped cucumber, extra lemon juice, and chilli oil as an option.
