Spicy, Herby Jalapeno Popper Baked Chicken
A very delicious, limey, herby and spicy situation topped with melty cheese.

Preheat your oven to 220°C fan bake.

Add the coriander, jalapenos, garlic, lime juice, sugar, cumin and olive oil to a nutribullet along with 1 tsp flaky sea salt (or ½ tsp fine salt). Blitz together until smooth.

Add the chicken to a large bowl, along with roughly ¾ of the green sauce. Toss together until well coated. Season to taste with salt.

Transfer to a small, round baking dish.

Top the chicken with the shaved cheese and drizzle over a little olive oil. Bake on the upper oven rack for about 15 minutes, until golden and bubbling (switch the oven to high grill for the last 2-3 minutes if it needs extra browning).

Garish with the green chilli and some extra coriander.

Drizzle over the remaining green sauce to serve.
Notes
Serve in charred tortillas with avocado, cabbage and some salted Greek yoghurt.
