In a large pot preheated over medium heat, add 1 Tbsp of the sesame oil along with the ginger, garlic, and scallions. Cook while stirring until the aromatics are fragrant and are starting to become tender, 2-3 mins.

Add the chicken stock, shiitake mushrooms, water chestnuts, bamboo shoots, soy sauce, salt, pepper, and the remaining 1 Tbsp sesame oil. Bring to a boil over high heat, and then down to a simmer over low heat and simmer uncovered for about 5 minutes until mushrooms are tender.

Add the bok choy, shrimp, and frozen wontons. Turn the heat to medium-high and bring the broth to a simmer, then turn the heat down to low and simmer for 3-5 mins until the wontons are heated though and the bok choy is tender but still bright green with a little al dente bite.

Divide into bowls and drizzle a little more sesame oil on top of the soup if you please :) enjoy!
Notes
Vegan Modification: Sub in vegetable stock for the chicken stock, and frozen veggie dumplings for the chicken wontons.
