Add raspberries to a small saucepan on medium heat, stirring occasionally.

Once raspberries have broken down add chia seeds, lemon juice, honey and vanilla extract. Cook for approximately 10 minutes, stirring regularly (consistency should thicken).

Remove saucepan from heat and allow to cool for 5-10 minutes (will continue to thicken as it cools).
