Baingan Masala with Imli/ Tamarind Fusion

    Heat 1 tablespoon of oil in a pan.

    Add 1 teaspoon of cumin seeds and 1 teaspoon of mustard seeds. Let them splutter.

    Add 1 teaspoon of minced garlic and 2 chopped green chilies. Sauté until fragrant.

    Toss in curry leaves for added aroma.

    Sprinkle in 1 tsp red chili powder, 1/2 tsp turmeric powder, 1 tsp coriander powder, and salt to taste. Mix well.

    Add 1 cup of chopped tomatoes. Cook until tomatoes are soft and mushy.

    Once the masala is cooked, add the brinjal pieces. Mix gently.

    Cook until the brinjal is tender and infused with flavors.

    Pour in 2 tablespoons of tamarind pulp for that extra tanginess and cook well.

    Stir well and simmer for a few more minutes.

    Serve hot and enjoy with rice or roti.
