Mom’s Pork & Chicken Adobo
My mom’s recipe interpreted by me. She told me she doesn’t measure bc it takes too long. I think after a while, you get the hang of things & can adjust as you go.

Cut meat into large chunks.

In a large bowl combine meat, garlic, soy sauce, & crushed black peppercorns. Let marinade for at least 1 hour.

In a large pot, heat & add 1 tbsp olive oil. Over medium high heat, remove meat from marinade & brown on all sides (don ’t throw the marinade away!)

When all meat is browned, remove the chicken only & set aside. We don’t want to cook the chicken at the same time as the pork because it will overcook.

Add oyster sauce & brown sugar to pork. Give it a good mix.

Add in marinade liquid, vinegar, whole peppercorns & bay leaves. Cover & simmer on medium/medium high for 30 minutes or until pork is tender & sauce is reduced about half way.

Add in chicken & water. Mix well to combine. Cover & cook for another 10 minutes or until chicken is cooked thoroughly.

Adjust flavors to your liking. Serve with rice.
Notes
Potatoes &/or eggs can also be added to this recipe (I didn’t have any). My husband’s family cooks theirs with potatoes, & the 1st thing he said was, “No potatoes? Adobo is supposed to have potatoes!”
