Miki Noodle Soup
Ilocano miki soup is a comforting noodle dish from the Ilocos region, featuring thick, yellow miki noodles in a savory broth made with chicken or pork. The soup is flavored with garlic, and fish sauce, then garnished with green onions. Although simple, it’s know for its rich, hearty taste, Ilocano miki soup is a beloved dish served during family gatherings and local celebrations.

In a large pot over medium heat, add garlic and sauté until lightly browned.

Next, add in chicken thighs, chicken broth, and water.

Bring to boil and simmer until chicken is cooked thoroughly around 8 to 10 minutes.

Remove chicken and shred. Once shredded add chicken back to pot along with annatto powder and fish sauce. For another five minutes.

Next, add in noodles. Feel free to cut noodles into 2 inch pieces if preferred. Cook noodles according to package.

Salt and pepper to taste. Garnish with green onions, eggs, and chicharron.
