Longanisa Fried Rice
It’s like longsilog, but all mixed together ~ which makes for easy eating. And these days easy meals are necessary because anything I can eat with one hand while holding the baby in the other is clutch!
Ingredients
Directions
- 1
In a large skillet or wok, add the longanisa and cook until browned and cooked through. Remove from the pan, leaving any rendered fat behind.
- 2
If necessary, add a little more oil to the pan. Add the diced onion and minced garlic. Sauté until softened and fragrant, about 3-5 minutes.
- 3
Stir in the day-old rice, breaking apart any clumps. Stir-fry for a few minutes until heated through.
- 4
Push the rice to one side of the pan. Crack the eggs into the empty space and scramble them until just set. Mix the eggs into the rice.
- 5
Add the cooked longanisa back into the pan. Stir to combine.
- 6
Sprinkle in the garlic powder and season with salt and pepper to taste. Mix well.
- 7
Fold in the chopped chives or green onions for a fresh touch.
- 8
Top with fried garlic and garnish with sliced tomatoes if desired.
