Instant Pot Pork Adobo (Adobong Baboy)
Easy instant pot version of pork adobo using Datu Puti soy sauce and vinegar.

Combine pork, garlic, soy sauce, and black pepper in a bowl. Marinate for about 15 – 30 minutes.

Turn IP to Saute mode. Add oil to IP. Once oil is hot, add maintained pork and saute until pork is browned thoroughly.

Add quail eggs, bay leaves, whole black peppercorns, oyster sauce, and brown sugar. Mix to combine.

Add in vinegar. Cover and close lid. Make sure that the knob is on Sealing direction. Cook on Manual/Pressure Cook at High Pressure, for 15 minutes, 5 minutes NPR.

Vent and release all of the pressure from the IP. Next, thicken your sauce by switching to Saute mode on High and allow to thicken for approximately 10 minutes or as desired.

Garnish with green onions and serve with white rice.
