Smashed Potato Green Goddess Salad
This is going to be the salad of my summer

Start with the crispy potatoes. Boil them for 20 minutes until soft

Strain and place on a tray lined with baking paper. Smashed down and add oil to both sides and salt well. Bake in a preheated oven on 200 degrees for 10-15 minutes

While the potatoes are baking, prep the salad. Combined all ingredients and mix well

Add potatoes and toss gently. Serve immediately
