Mediterranean-styled Turkey Meatballs with Kale Salad

A simple and quick to make meal loaded with lemony, herby goodness, perfect for meal prep and leftovers

Directions

    Mix everything together in a bowl, and form into golf-sized balls. Add to air fryer at 400 for ~10 minutes.

    Massage 1 bag fresh kale with vinaigrette, add 1 can (drained) artichokes, 1/4 cup Kalamata olives, and 1 medium cucumber (chopped).


Notes

Everything keeps well for 3-5 days in airtight containers. Meatballs can be used on top salads, as a standalone or added to rice or other roasted vegetables.
