Coconut Crusted Prawn Burgers

This burger is packed with tropical flavour and takes no time at all to whip up. Give it a crack!

    Whisk together the flour, water, garlic powder, onion powder, chili powder, and salt to form a smooth batter.

    Dip each prawn into the batter, coating it evenly.

    Press the battered prawns into the shredded coconut, ensuring they’re fully coated.

    Heat coconut oil in a frying pan over medium heat.

    Fry the coconut-crusted prawns for 3-4 minutes per side until golden and crispy.

    In a small bowl, mix the soy sauce and vegetable oil.

    Throw pineapple in and let it marinate.

    Grill the pineapple rings on a pan or outdoor grill over medium-high heat for 2-3 minutes per side, until caramelized and slightly charred.

    Spread the mayonnaise on the toasted buns.

    Place lettuce leaves on the bottom bun, followed by a layer of the fried prawns.

    Top with a slice of grilled pineapple and tomato.
