Healthy Pumpkin Curry Soup with Chickpeas and Sweet Potato

I’m currently embracing the fall weather by making cozy recipes and this soup has been a repeat! I love making a big batch of soup to enjoy throughout the week as an easy healthy dinner!

    Add the avocado oil to a sauce pot on medium heat. Add in the diced onion, minced garlic cloves, and spices to the pot. Sauté for a few minutes.

    Add in the rest of the ingredients to the pot. Bring to a boil and then simmer until the veggies are cooked through. Optional: blend hall if the mixture in a blender (or use an immersion stick blender) and then pour it back into the soup.

    Serve with naan bread or rice, garnish with parsley, and enjoy!
