Delicious Cold Soba Noodle Salad

Great for meal prep, and pairs well with any protein like tofu or chicken.

    In a pan over medium heat, add oil and sauté garlic for 30 seconds or until fragrant.

    Add vegetables and cook for 5 min or until slightly tender. Season with salt and pepper and set aside to cool.

    Meanwhile, add all ingredients for the dressing into a jar and shake well until combined.

    In a large mixing bowl, add soba noodles, vegetables and edamame. Toss with dressing.

    Garnish with sesame seeds and green onion. Chill in the fridge for 30 min before serving and enjoy!
