Blood Sugar-Friendly Chocolate-Covered Strawberries
Managing blood glucose levels can be a struggle at times, and when I was first diagnosed with prediabetes I avoided desserts altogether. But over the years, I’ve learned how to enjoy some of my favourite sweet treats in a way that supports a healthy relationship with food and keeps my blood sugar levels within range.

Melt some dark chocolate chips with a bit of coconut oil in the microwave for 20 second increments, stirring in between until fully melted.

Dip your strawberries, placing them onto a parchment-lined baking sheet.

Pop them in the fridge to set and enjoy!
