Fall Harvest Bowls with Saputo Halloumi Cheese Fries
A great way to get dinner on the table quick!

Preheat the oven to 425ºF. Prepare the vegetables by peeling the sweet potato and slicing into long fry-like shapes. Cut the onion into a large dice. Peel the outer leaves off the brussels sprouts, cut the stems off, and slice in half. Add the veggies to a large sheet pan.

In a small bowl, whisk together the marinade ingredients. Pour over the veggies and mix until they’re all coated. Roast for 25 minutes.

Peel and chop a honey crisp apple into a large dice. Add to the pan after 25 minutes and roast everything for another 10-15 minutes.

While the veggies roast, prepare the Cheese Fries. Heat 2-4 tbsp of neutral oil in a non-stick skillet over medium-high heat. Shallow fry the Cheese Fries for 20 seconds per side until golden. Place on a plate lined with paper towel.

Assemble bowls with a scoop of each vegetable then add the Cheese Fries. Top with dried cranberries, nuts, or hot sauce if desired. Enjoy immediately!
