Simone S’more Cookie
Celebrating the 2024 Paris Olympics by bringing you the ultimate cookie recipe in honor of @simonebiles feat. one of her favorite treats, S’mores.

Preheat oven to 375°F (325°F for convection). Place 9 graham crackers on a cookie sheet, and toast until they are a deep golden brown, approx. 10-15 mins. Remove from oven, let cool slightly, & set one of the crackers aside.

In a stand mixer, cream the butter & sugars until smooth. Add the eggs & vanilla and mix again until smooth. Add the flour, salt, baking soda, cinnamon, and 8 of the graham crackers to the stand mixer, breaking the crackers as you are placing them in the bowl. Mix until barely combined. Add the peanut butter chips, 2 cups of the milk chocolate chips, and mini marshmallows and mix until everything is just combined.

Using a size 16 cookie scoop (1/4 cup size) scoop the dough into balls. Chill for 1 hour or overnight. Line a cookie sheet with parchment paper, placing 6 dough balls on top, and bake for 10-12 mins (9-11 if using convection), until the bottom and top of the cookies are golden brown.
