Easy brunch recipe with confit garlic, roasted vine tomatoes, and feta on toast.

Ingredients

Confit Garlic

Chilli Oil

Parsley

Roasted Vine Tomatoes

Feta

Directions

    Peel as many garlic cloves as you like, and put these in a dish that you can put in the oven.

    Cover in high quality olive oil until they are just submerged (just over the top of the cloves).

    Put in the oven at 130C for a couple of hours until soft and squishy.

    Spread over your toast, add some crumbled feta, top with roasted tomatoes, chill oil and parsley.


Notes

Confit garlic keeps really well in the fridge.
