An arrangement of vegetables that taste great when cooked together, with a caramelised top and tender bottom, served with crusty bread or over couscous or rice.

    Slice up the vegetables and arrange them in a baking dish.

    Stuff in sliced garlic, sprinkle with fresh thyme, sea salt flakes and drizzle with extra virgin olive oil.

    Bake at 180 degrees for about 50 minutes, or until tender and fragrant.
