Great for lunchboxes or pick-me-ups, and they won’t even realise they are eating all the good stuff!

    Pre heat oven to 180°C or 350ºF and line a muffin tray

    Grate the carrot and courgette then squeeze out as much juice as possible using a clean cloth (put juice aside for a VERY tasty refreshment)!

    Put all the ingredients (except the chocolate chips) into a food processor or blender with a hand blender

  4. 4

    Fold in chocolate chips, saving some for decoration

  5. 5

    Divide the mixture into the muffin trays and decorate with remaining chocolate chips

  6. 6

    Oven bake for 25-30 minutes until it no longer bubbles (and a toothpick comes out clean)!

    Enjoy hot or cooled!
