Bossam is a dish that you wrap tenderly boiled pork, kimchi, ssamjang, garlic, and other ingredients in a lettuce and enjoy it.

    Sear the pork meat (optional).

    In a pot, add the pork, 1/2 onion, green onion, 5 cloves garlic, 1Tbsp whole black peppercorns, and 2 Tbsp doenjang. Add enough water to cover the pork.

    Cover with a lid and simmer on low heat for 1 hour (lid optional).

    After 1 hour, remove the pork and slice it.

    To serve, place pork, kimchi, garlic slices, and ssamjang on a lettuce leaf, then wrap and enjoy.


Notes

For cleaner slices, cool the pork before cutting (use ice water or refrigerate). Searing the pork for browning adds a layer of flavor, but you can skip it if you prefer—it will still taste great. If you don’t have doenjang, ssamjang can be used as a substitute. Using only the white part of the green onion gives a cleaner taste, but adding the green part is fine too. If you don’t have lettuce, napa cabbage leaves make a good alternative for wraps.
