Achari Paneer Naan Pizza

Blend fennel and coriander seeds with dried red chili, cumin seeds, mustard seeds, nigella seeds, and fenugreek seeds into a powder.

Heat oil on medium-high and add cumin seeds, allowing them to sizzle for 30 seconds.

Add red onion and sauté for 5-8 minutes until golden brown.

Add ginger garlic paste and sauté for a minute.

Add chopped tomato and puréed tomatoes and cook for 5-8 minutes until oil separates from masala.

Add achari spice blend, salt, and paneer, and coat well with masala.

Add a splash of water if needed to create a bit of sauce and turn off heat.

Slather masala onto naan, place paneer on top, and sprinkle with cheese.

Bake at 450F for 5-7 minutes or until cheese has melted and naan is turning slightly crisp at edges.

Finish with a 30-second broil, top with cilantro, slice, and serve right away.
